Recetas: Healthy Garlicky Shrimp by Nuestra Hermana
My mom bought shrimp! This isn’t usual and whenever we have shrimp we have them made same few salvadoran recipes my mom goes to for shrimp. Today, when I asked her how she was going to make them she handed them over to me and she said, “Has me una sorpresa!”
(“Make me a surprise!”/”Surprise me!”)
I stood there in the kitchen and thought for a few minutes while I looked through the fridge and pantry.
Our neighbor had bought us red wine but we don’t drink wine. I figured, why not cook with it?
I also had my mom pick some bell peppers from the backyard.
So, this is what I made:
Ingredients:
1 lb of shrimp (devained and cleaned)
1 regular sized bell pepper or a few mini bell peppers chopped
1 medium onion chopped
3-4 cloves of garlic minced
Two handfuls of mini tomatoes halved or 1 tomato chopped
1/4 - 1/2 cup red wine
1 TBSP margarine
Pepper
Salt (optional)
Cilantro (optional)
1. Saute margarine & garlic in pan. Add in shrimp and stir for a couple of minutes.
2. Add all vegetables and stir often. For about 5 minutes or until shrimp turn orange on both sides.
3. Add in wine & pepper & a pinch of salt (or omit salt like we do due to health needs). Let wine/liquid dissipate.
4. Once cooked through but not overcooked & a slightly thick “sauce” has formed take off heat and serve with rice, a salad, a grain or anything else you’d like.
5. Top with cilantro or fresh chopped tomato
